Purple Yam and Cauliflower Smoothie

Ingredients
  • 1 scoop of Pegan Shake powder or any protein/collagen powder
  • 2 oz purple yam, boiled and cooled (¼ cup)
  • ¼ cup cauliflower, frozen 
  • ⅓ cup blueberries, fresh or frozen
  • 1 inch fresh ginger root, peeled
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chia seeds 
  • 1 teaspoon rose water extract (optional)
  • 1 cup nut milk, unsweetened (we used almond milk) 
  • Handful of ice
  • Optional Topping:
  • Coconut flakes 
  • Raw pumpkin seeds
Preparation

Peel and cut sweet potatoes to 2 inch pieces, boil for 10 minutes or until fork tender. Remove from heat and drain. Place in the freezer for 10 minutes while preparing the rest of the ingredients.

Add all of the shake ingredients to a high speed blender and blend until smooth, about 30 seconds.

Sprinkle optional toppings.
