A simple, yet gorgeous, shake blooming with the flavors of summer is definitely a great way to start your day. Indulge in this rose and cherry heaven, swirled into a creamy, dreamy guiltless shake that will keep you energized, full, and smiling throughout the day.  

Ingredients
  • Crunchy Topping:
  • 1 tablespoon toasted coconut, unsweetened (optional)
  • 1 teaspoon raw pistachios, chopped (optional) 
  • Shake Ingredients: 
  • one scoop of Pegan Shake Powder or any protein/collagen powder
  • ½ cup fresh or frozen cherries, pitted
  • ½ cup frozen zucchini, peeled  
  • ¼ teaspoon ground cardamom 
  • ¼ teaspoon ground cinnamon  
  • 1 tablespoon pistachio butter 
  • ½ teaspoon rose water extract, use more for stronger flavor  
  • ½ cup canned coconut milk
  • ½ cup non-dairy milk 
  • ½ cup filtered water
  • 4 ice cubes 
Preparation

Toast the coconut by adding it to a dry pan over medium heat, shake the pan occasionally, and remove from heat when toasted, about 1 minute. Chop pistachios and set aside.

Add all of the shake ingredients to a high speed blender and blend until smooth, about 30 seconds. Sprinkle coconut and pistachio topping. 

 

 

 

 

 

 

 

 

 

This recipe is flexible based on what you have on hand. Zucchini provides a perfect creamy texture, but could be replaced with frozen cauliflower. Pistachio butter could be replaced with any nut butter you have handy. If you prefer a lighter smoothie, you could use water instead of non-dairy milk, but keep the canned coconut milk.
