Every now and again, we need a little treat! Luckily, this Carrot Cake Quinoa Shake is the perfect healthy treat—it’s good for you and will keep you full and satisfied throughout the day. If you are on the Reset, bookmark this recipe for when you are finished because of the apples.

Ingredients
  • one scoop of Pegan Shake Powder or any protein/collagen powder
  • ¼ cup quinoa, cooked and cooled 
  • ¾ cup carrots, grated
  • ½ cup apple, diced
  • ¼ teaspoon fresh ginger root, grated 
  • 1 tablespoon whole flaxseeds
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ⅛ teaspoon ground cloves
  • ½ teaspoon vanilla extract 
  • 1 cup non-dairy milk, unsweetened
  • Handful of ice cubes 
  • 1 tablespoon coconut flakes (optional for topping)
  • 2 raw walnuts or pecans, chopped (optional for topping)
Preparation

Cook quinoa according to the manufacturer instructions without adding oil and let cool. This could be made in advance or you could use quinoa leftovers from another meal.

Add all of the shake ingredients to a high speed blender and blend until smooth, about 30 seconds.

Sprinkle optional coconut flakes, chopped walnuts, or pecans. Enjoy!   

 



 

 

Carrots bring a dose of sweetness, as well as beta-carotene, vitamin C, and fiber. Apples are a great source of fiber, too, while the spices—cinnamon, cloves, and ginger have anti-inflammatory properties. The quinoa in this shake recipe creates the creamy, thick texture with an additional nutty flavor and a dose of fiber, protein, and minerals. Walnuts and flaxseeds lend a rich nutty flavor in addition to providing omega-3 healthy fats.

This recipe is flexible based on what you have on hand. Apples could be replaced with fresh or frozen mangos or pineapple for the perfect sweetness. Quinoa provides a creamy texture, but could be replaced with frozen zucchini or cauliflower. Walnuts could be replaced with any chopped nuts you prefer, such as pecans or almonds. If you prefer a lighter shake, you could use water instead of non-dairy milk.
